Fine dining delights at college

A trio of student chefs are putting the final touches to their graduation menu for an evening of fine dining at West Nottinghamshire College.

Marcus Fisher (19), Tom Brown (20) and Rebecca Jennings (19), will be serving up five courses to diners at the college’s training restaurant – the Number 19 Brasserie – on Friday (25 March) as they graduate from the NVQ Level 3 Professional Cookery course.

Dishes will include pan fried scallops, celery and stilton soup, stuffed chicken breast as well as a dessert of raspberry and lemon mille feuille.

Fellow NVQ Level 3 Supervision and Leadership student, Lewis Newbury, will be managing the 'front of house' during the meal and has a range of traditional cocktails to serve to guests throughout the evening.

Tom Brown, from Mansfield, said: “In the future I’d love to work at a restaurant on the coast, maybe in Devon or Cornwall, as I enjoy cooking fish dishes.”

Meanwhile, following the completion of his college course, Marcus, from Mansfield, has the chance to go to France to put his newly-acquired catering skills to use while Lewis, also from Mansfield, is hoping to work his way up into a managerial role within the hospitality industry.

Diners can book a table for the graduation meal, which costs £24.95 per person, by calling the Number 19 Brasserie on (01623) 413629. Tables will be available from 6.30pm.
